Crafted by Ichiro Akuto, rumoured to be a vatting of the closed Japanese distillery of Hanyu with that of the relatively young distillery of Chichibu, where this whisky was matured, married and bottled.
The whiskies were matured in Mizunara oak casks (rare Japanese oak).
Given that this was first released in 2010 and and Hanyu has become thinner on the ground since, we can only assume the Hanyu content has or will eventually be removed.
When that will happen or if it has already happened is unclear.
Tasting notes;
Appearance/colour; Gold.
Nose; Plenty of oak with sweet aromas and slightly floral. Green fruits take the lead of pears and apples.
Palate; More green fruits and sweetness with plenty of oak. Some spices of nutmeg and cinnamon.
Finish: Lots of sweet spices, plenty of drying oak, liquorice, and creamy mint ice cream.
Distillery History: Single malt whiskey production rooted in the climate of Chichibu is carried out.
Mr. Ichiro Akuto, the founder of the distillery, takes pride in producing Japanese whiskey, and is committed to handcrafting malt whiskey using small mills, mash tuns, Quercus fermenters, and pot stills made by Forsyth in Scotland.
The area around the Chichibu distillery is rich in nature, with clean air, good quality water, high temperatures and humidity in the summer, and cold temperatures that reach below freezing in the morning and evening. The difference in temperature between the two regions has a profound effect on the maturation of the whiskey, resulting in a fruity and well-balanced whiskey despite the short maturation period.
Established in September 2004.
The Chichibu distillery was completed in 2007.
In February 2008, a license to make whiskey was issued and the Chichibu distillery began making whiskey.
In October 2019, the second distillery will begin operations.
